Lemon Chicken and Rice Recipe






Lemon Chicken and Rice Ingredients:


  • 1 pound chicken breasts, boneless & skinless
  • 1 can ( about 14-1/2 ounce) chicken broth
  • 1-1/2 cups instant rice, uncooked
  • 1 cup frozen peas
  • 2 tbsp butter
  • 2 tbsp lemon juice
  • 1 tbsp cornstarch
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 carrot, thinly sliced
  • 1/2 tsp black pepper
  • 1/2 tsp salt

How to make Lemon Chicken and Rice:

  • Cut chicken into strips and set aside.
  • Melt butter in a large skillet.
  • Add onion, chicken strips, onion, garlic and carrot.
  • Cook for 5-7 minutes or until chicken is no longer pink.
  • In a small bowl, mix together cornstarch, chicken broth, lemon juice , black pepper and salt.
  • Gradually add this mixture to the skillet.
  • Bring to a boil and cook for 2 minutes or until sauce is thickened.
  • Now stir in rice and peas.
  • Remove from the heat.
  • Cover with a lid and let stand for 5 minutes.
  • Then take it out in a serving plate.
  • Lemon Chicken and Rice is ready now.

  • Serve hot.
