White Bean Chicken Chili Recipe







White Bean Chicken Chili Ingredients:
  • 1 pound diced, cooked chicken meat
  • 1 (18.75 ounce) can tomatillos, drained and chopped
  • 1 (15 ounce) can white beans
  • 1 (14.5 ounce) can chicken broth
  • 1 (16 ounce) can diced tomatoes
  • 1 (7 ounce) can diced green chiles
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped
  • 2 ears fresh corn
  • 2 tbsp vegetable oil
  • 1/2 tsp dried oregano
  • 1/2 tsp ground coriander
  • 1/2 tsp black pepper
  • 1/4 tsp ground cumin
  • 1 pinch salt

How to make white Bean Chicken Chili:

  • Heat oil in a large skillet over medium high heat.
  • Saute onion and garlic until soft.
  • Stir in chicken broth,tomatoes, tomatillos and green chilies.
  • Also add oregano, coriander and cumin.
  • Bring to a boil then simmer for 10 minutes.
  • Add chicken, corn, and beans.
  • Cover and simmer for 5 minutes or until cooked thorough.
  • Season with salt and pepper.
  • White Bean Chicken Chili is ready now.

  • Serve with Garlic Bread.
