Boneless Buffalo Chicken Salad Ingredients:
- 1 lb chicken tenders
- 1 fresh tomato, chopped
- 1 red onion, finely chopped
- 1 medium carrot, cut into matchstick-thin strips
- 6 cups torn iceberg lettuce
- 1/4 cup sour cream
- 2 tbsp mayonnaise
- 2 tsp crumbled blue cheese
- 1/2 tsp apple cider vinegar
- 1/2 tsp hot pepper sauce
- Cooking spray
How to make Boneless Buffalo Chicken Salad:
- Preheat oven to 450 degree F.
- Lightly coat baking sheet with cooking spray.
- Set aside.
- In a small mixing bowl, combine together the 2 tablespoons mayonnaise, sour cream, cheese, and vinegar.
- Set aside.
- In a large bowl, lightly toss chicken with hot sauce.
- Place chicken in single layer on the prepared baking sheet.
- Lightly coat chicken with cooking spray.
- Bake in the preheated oven for 10 minutes or until cooked through, turning once.
- Remove from the oven and cut into 1-inch pieces.
- In a large serving bowl, combine lettuce, tomato, carrot and onion.
- Drizzle with dressing.
- Mix well.
- Top with baked buffalo chicken.
