Lemon-Pepper Fish Fillet Sandwiches Ingredients:
- 4 whole-grain or rye sandwich buns, toasted
- 2 tilapia fillets (about 6 oz each), each cut crosswise in half
- 1 cup shredded lettuce
- 1/4 cup tartar sauce
- 2 tbsp yellow cornmeal
- 2 tbsp all-purpose flour
- 1 tbsp vegetable oil
- 1 tsp seasoned salt
- 1/2 tsp lemon-pepper seasoning
Directions:
- Place cornmeal, flour, seasoned salt, lemon pepper seasoning in a shallow bowl.
Mix well. - Coat fish fillets with flour mixture.
- Heat oil in a nonstick skillet over medium-high heat.
- Place fish fillets into the skillet.
- Cook in hot oil for 5 minutes on each side or until fish flakes easily with fork.
- Spread tartar sauce on cut sides of toasted buns.
- Place fish fillets on buns.
- Top buns with lettuce leaves.
