Ingredients:
- 1-1/4 pounds boneless, skinless chicken breast halves
- 2 cups soft bread crumbs
- 1/2 cup Dijon mustard
- 1/4 cup minced fresh parsley
- 1 tbsp chopped green onion
- 1 tsp black pepper
- salt to taste
Dijon Chicken Kabob’s Method:
- Preheat oven to 450 degree F.
- Line a baking tray with foil.
- Coat the foil with nonstick cooking spray.
- Cut chicken into 1 inch cubes.
- Sprinkle salt and pepper over it.
- Toss well.
- Place Dijon mustard and green onion in a bowl.
- Place combine bread crumbs and parsley in another shallow bowl.
- Now toss chicken in mustard mixture then coat with crumbs.
- Thread chicken onto soaked wooden skewers.
- Place skewers on the prepared baking tray.
- Bake, uncovered, for 10 minutes or until chicken is tender and all juices run clear.
