Lemon Chicken and Rice Ingredients:
- 1 pound chicken breasts, boneless & skinless
- 1 can ( about 14-1/2 ounce) chicken broth
- 1-1/2 cups instant rice, uncooked
- 1 cup frozen peas
- 2 tbsp butter
- 2 tbsp lemon juice
- 1 tbsp cornstarch
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 carrot, thinly sliced
- 1/2 tsp black pepper
- 1/2 tsp salt
How to make Lemon Chicken and Rice:
- Cut chicken into strips and set aside.
- Melt butter in a large skillet.
- Add onion, chicken strips, onion, garlic and carrot.
- Cook for 5-7 minutes or until chicken is no longer pink.
- In a small bowl, mix together cornstarch, chicken broth, lemon juice , black pepper and salt.
- Gradually add this mixture to the skillet.
- Bring to a boil and cook for 2 minutes or until sauce is thickened.
- Now stir in rice and peas.
- Remove from the heat.
- Cover with a lid and let stand for 5 minutes.
- Then take it out in a serving plate.
