White Bean Chicken Chili Ingredients:
- 1 pound diced, cooked chicken meat
- 1 (18.75 ounce) can tomatillos, drained and chopped
- 1 (15 ounce) can white beans
- 1 (14.5 ounce) can chicken broth
- 1 (16 ounce) can diced tomatoes
- 1 (7 ounce) can diced green chiles
- 1 onion, finely chopped
- 2 cloves garlic, chopped
- 2 ears fresh corn
- 2 tbsp vegetable oil
- 1/2 tsp dried oregano
- 1/2 tsp ground coriander
- 1/2 tsp black pepper
- 1/4 tsp ground cumin
- 1 pinch salt
How to make white Bean Chicken Chili:
- Heat oil in a large skillet over medium high heat.
- Saute onion and garlic until soft.
- Stir in chicken broth,tomatoes, tomatillos and green chilies.
- Also add oregano, coriander and cumin.
- Bring to a boil then simmer for 10 minutes.
- Add chicken, corn, and beans.
- Cover and simmer for 5 minutes or until cooked thorough.
- Season with salt and pepper.
